Ingredients:

  • 1 red onion, sliced into thin rings
  • 3 bell peppers (red, yellow, green), sliced into thin strips
  • 2 medium sized cucumbers, sliced into thin rounds
  • 1/2 cup of cherry tomatoes, halved
  • 1/2 cup of black olives, sliced
  • 1/4 cup of fresh parsley, chopped
  • 1/4 cup of fresh mint, chopped
  • 2 tablespoons of olive oil
  • 2 tablespoons of red wine vinegar
  • 1 teaspoon of garlic powder
  • Salt and pepper, to taste

Hungarian PusztasalatFirst up, you want to prep all of your veggies by slicing them into thin pieces. The key to a good Pusztasalat is to have veggies that are all roughly the same size so they mix together well. Once your veggies are sliced, put them all in a large bowl.

Next, in a small bowl, whisk together the olive oil, red wine vinegar, garlic powder, salt, and pepper. Pour this dressing over the veggies and toss everything together until the veggies are evenly coated.

Now comes the fun part: let the salad sit for at least 30 minutes to allow the flavors to develop. Stir it every so often to make sure everything is still coated in the dressing. Just before serving, sprinkle the chopped parsley and mint over the top of the salad.

Spice it up:

If you’re feeling particularly adventurous, you can add a little extra spice to your Pusztasalat by using some rosenscharf Hungarian paprika. This type of paprika is known for its heat - add a sprinkle or two to the salad and see how you like it!

Make it a meal:

If you want to turn this salad into a full meal, you can add some sliced grilled chicken or sliced beef to it. You could also serve it alongside some crusty bread or pita to make it even more filling.
